Tips for those who want to travel in Sardinia.

A trip to Sardinia always means an adventure in a forgotten land, but at the same time fascinating and sufficiently modern.

Everything is real, current, but different from any other place you have ever seen, even if it seems to many that you have already lived there, because Sardinia is like the unconscious, an unconscious of the world.

For a plunge into worldliness, on the other hand, you will have to opt for the north-east and its pomp and luxuries, with golf, boats, beaches, harbours, clubs, drinks and champagne, and everything that billionaires, real or apprentice, need.

However, you will always find a Mediterranean climate, generally mild. There are very few days with temperatures below zero, in winter, or as hot as 50 degrees in high summer.

What to eat in Sardinia
Here is a list of the most famous and popular dishes among authentic Sardinians. Restaurants offer a wide variety of choices, but if you want something less elaborate and more authentically Sardinian, try these dishes and you won’t regret it:
-Su proceddu: this is the number one dish, either spit-roasted or baked; hope it’s a female and you’ll understand why everyone loves it so much;

  • Sardinian suckling lamb or kid: i.e. that has never eaten even a blade of grass; spit-roasted, baked, stewed with potatoes and tomato sauce, with artichoke sauce, with sun-dried tomato sauce; or boiled, very delicate and light for after the festive feasts
  • Goat or sheep: in summer, roasted or with various sauces made from tomatoes and spices;
  • Fish: of all kinds and cooked in all ways; some restaurants prepare excellent cassole (fish soup);
    -Sardinian lobster: excellent and highly prized, now endangered, we hope it will be saved by regional fishing laws. Highly sought after by the great chefs of the world’s capitals.
  • Bottarga: tuna or mullet roe seasoned in brine; used as an appetiser or grated to season pasta and fish or clam soups.
  • Fregula: Sardinian couscous, prepared with small balls of semolina and flour, cooked in various sauces, with tomatoes, clams or vegetables.
  • Pasta: is malloreddus, a typical Sardinian pasta made with semolina and Sardinian wheat flour, and cooked with various sauces, from tomato to ragù, with dry or fresh sausages, bottarga or even pesto;
  • IS culingionis, typical small pasta parcels filled with potato cream and/or cheese and spices;
  • Panada: very popular in the south, this is a wheat dough shell in the shape of a small pot containing a mixture of meat, fish, artichokes or other vegetables, all baked in the oven.

DESSERTS
Every locality has its own specialities. The ones listed here are the most common.

  • AMARETTI: made with various combinations of sweet and bitter Sardinian almonds and various sugars; simply delicious.
  • PARDULE: small sweet pastry cases filled with sweetened ricotta and baked in the oven.
  • IS PIRICCHITTUS: voluminous sweetened and glazed pastries.
  • SU PANI E SABA: Sardinian panettone, made with flour and various dried fruits mixed with fine wines and condensed grape syrup. Be sure to try it, even though it is generally only available in winter.
